
Plant-based Sushi Rolls
As much as I love white rice, I also like to count the nutrients in my plate! So this time went with the brown rice and for the first in sushi rolls!
I crave for sushi most of the time, but it takes me long to decide to make them because I love to have my friends over or schedule it with them, so we call it a sushi party!


So this time I added eggplants to my sushi, marinated it with garlic and soya sauce and cooked them. They add a great taste to veggie sushi rolls.
Ingredients:
Makes 8 sushi rolls
- 8 sheets of sushi nori
- 1 cup brown rice
- 1 cup black rice
- boiled water (to cook rice)
- 1 cucumber, cut into match sticks
- 1 cucumber, cut into match sticks
- 1 avocado, cut into slices lengthwise
- 1 eggplant
- 1 garlic clove
- 2 tbs soya sauce
- 1 tbs teaspoons sesame oil
- 1 tbs rice vinegar
- 2 tsp maple syrup

Dipping sauce:
- 1/4 cup soy sauce
- sesame seeds
- 1 garlic clove minced
- green peppers (optional)

Instructions:
- Soak both rice separately 1 hour before.
- Cook rice separately, 4 cups water for black rice. And 3 cups water for brown rice. Cook until semi-cooked and water has almost finished. Lower the heat and let simmer.
- Once the rice is cooked, divide the sesame oil, vinegar, maple syrup for each rice, mix and let cool.
- Place the nori with the shiny side down on a sushi mat. Spread the rice (black or brown) over the nori, leaving about 2 cm at the top.
- For the eggplant rolls: Cook the sliced eggplant in a pan with some olive oil and garlic, when golden add 1 tbs soy sauce and 1/4 cup water and let cook until tender. Let cool before adding to sushi with your choice of vegetable.
- For the avocado rolls: Place the avocado, cucumber, and carrot.
- Start by rolling from the point nearest to you, keep the filling in with your fingers and firmly pressing. Wet your finger and tap on the empty nori side to help close the edge.
- Cut into pieces by starting from the middle make halves until you get 6-8 rolls.
- For the sauce: mix the ingredients together and serve in small dipping bowls.
- Serve sushi with pickled sushi ginger and sauce.
