Plant-Based,  Salad


Salad recipes are my perfect lunch for summer, and this corn salad is very easy, with simple ingredients! It’s corn season, so why not eat some seasonal veggies from the farmers market!? Right?!


  • 2 ears of corn
  • 1 avocado
  • 1 small online
  • Scallions to taste
  • parsley to taste
  • 2 tbs lemon juice
  • 1 tsp salt


  1. Boil the corns for 20 minutes. While the corn is cooling, mix lemon juice, olive oil, and salt and set a side.
  2. Cut the corn kernels with a knife (as the GIF above).Toss all the ingredients together and add the lemon mixture. ENJOY!
